Our War Room accommodates up to 12 guests and is ideal for business meetings, HOA gatherings, book clubs, and more. The room features a 75" TV with full connectivity for presentations. Since Stilt House opened in 2014, Sean has guided its lineup of craft beers — from classic styles to experimental seasonal brews — drawing on a lifetime of homebrewing and a deep understanding of the brewing process.

Dylan Fresh

I’m a fourth-generation Dunedin, Florida native, and my family’s roots in Pinellas County run deep. I’m an executive at St. Mark Village, a community my family founded over 45 years ago and has proudly supported ever since. Carrying on that legacy is incredibly meaningful to me, and I’m honored to continue building on the values of service, commitment, and community that have shaped both my family and this area for generations.

I grew up in Alaska and moved to Florida while working as a respiratory therapist operating life support during the pandemic. After 25 years in healthcare, I decided to move into bartending full time honing my craft and cherishing a new career surrounded by people that have become family to me.

I’m a Dunedin, Florida native, born and raised. I grew up at Still House Brewery and have worked under our President, Sean, for the past eight years. In 2023, I stepped into the role of Head Brewer. I’m passionate about crafting beers that make people happy and bring the community together.

Ken Dabb

Born in New York and shaped by life in Virginia and Texas, I’ve worn many hats along the way—from welding and federal service to IT. Today, you’ll find me behind the bar at Stilt House Brewing, bringing the same work ethic and attention to detail to every pour. When I’m not working, I’m playing drums, gaming, or unwinding at the beach.

Ross Howsare

I’ve lived in Dunedin since I was four years old and still live in the same house. I grew up around construction and building plans, later working as a plans examiner and building inspector. I’ve been coming to Still House since its inception, back when Sean was building it. Over time, I found my place behind the tanks and now proudly serve as Guest Services Director.

Born & rise in Wildwood, New Jersey and move to Florida when I was 23. Been behind bar since I was 21 and have been working with food since I was 18. I always love being creative and trying new things, especially in the kitchen or behind bar.
